Wild Herb's Red Quinoa Salad
Ingredients
1 cup Red Inca Quinoa
2 cups Water
2 Tomatoes, chopped. Drain.
1 1/2 cup Grated Carrot
2 cup Diced Cucumber
1/4 cup chopped Cilantro
2 TBL Lemon Juice
4 Green Onion, shopped
1/2 cup Olive Oil
Salt and Pepper to taste
Directions
Cook Quinoa in water for 15 minutes or until water is absorbed.
Drain.
Add all other ingredients and chill for 1 hour.
