Linguine with Clam Sauce
Ingredients
8 oz. linquine
1/4 c. olive oil
2 tbl. minced garlic
3 cans drained minced clams, liquid reserved*
1/2 c. dry white wine
1/2 c. reserved clam broth
1/2 c. minced fresh parsley, and/or green onion
1 tsp. basil
1 tsp. oregano
white pepper
Parmesan cheese
Directions
Sauté garlic briefly in olive oil. Do not burn. Add next six ingredients. Cover and simmer 10 minutes. Uncover and reduce for 3 minutes. Toss with cooked linguine, pepper and Parmesan.
* buy good clams for use fresh, if possible.
