Coconut Creamed Corn
Ingredients
2 cups Corn Kernel (fresh is best)
1 cup Coconut Milk
1/4 tsp salt
2 TBL Fresh Cilantro, chopped
1 TBL Lime Juice
1/4 tsp cayenne
Directions
Combine corn kernels, coconut milk and salt in medium saucepan. Bring to a boil, then adjust the heat to maintain an active simmer.
Cook, stirring occasionally, until most of the coconut milk has evaporated, 2 - 15 minutes. Stir in cilantro, lime and cayenne.
Great with Thai Grilled Flank Steak!
